I worked closely with the tea producer throughout the development of this tea, refining both the selection of the raw material and the roasting process.\u003c\/p\u003e\n\u003cp data-start=\"770\" data-end=\"1203\"\u003eOne of the most important qualities of an outstanding Hojicha is its \u003cstrong data-start=\"839\" data-end=\"865\"\u003elong, lingering finish\u003c\/strong\u003e. With this in mind, we selected sencha made exclusively from the first flush harvest. Naturally grown without fertilizer, this sencha develops an exceptionally long-lasting aftertaste and is rich in polyphenols. These characteristics make it an ideal raw material for producing a hojicha with remarkable depth, sweetness and complexity.\u003c\/p\u003e\n\u003ch2 data-section-id=\"jhuzpz\" data-start=\"1210\" data-end=\"1240\" class=\"PDq2pG_selectionAnchorContainer\"\u003eWhy the Heat Source Matters\u003cspan aria-hidden=\"true\" class=\"PDq2pG_selectionAnchor\"\u003e\u003c\/span\u003e\n\u003c\/h2\u003e\n\u003cp data-start=\"1242\" data-end=\"1511\"\u003eThe flavor of Hojicha is influenced not only by the tea leaves themselves, but also by the \u003cstrong data-start=\"1334\" data-end=\"1373\"\u003esource of heat used during roasting\u003c\/strong\u003e. Whether the tea is roasted over \u003cstrong data-start=\"1407\" data-end=\"1449\"\u003efirewood, charcoal, gas or electricity\u003c\/strong\u003e, the difference in the final cup is surprisingly significant.\u003c\/p\u003e\n\u003cp data-start=\"1513\" data-end=\"1835\"\u003eThe same principle applies to cooking. Grilling meat or eel over charcoal or a wood fire produces a very different result from cooking with gas or an electric stove. Even when food is cooked in a frying pan without direct contact with the flame, the choice of heat source noticeably affects its aroma, texture and flavor.\u003c\/p\u003e\n\u003cp data-start=\"1837\" data-end=\"1870\"\u003eTea behaves in much the same way.\u003c\/p\u003e\n\u003cp data-start=\"1872\" data-end=\"2198\"\u003eHojicha roasted over a \u003cstrong data-start=\"1895\" data-end=\"1908\"\u003ewood fire\u003c\/strong\u003e develops a cleaner, brighter and more transparent character, with a crisp finish that is difficult to achieve using conventional gas or electric heat. This difference is not caused by the tea leaves coming into direct contact with the flame, but by the unique qualities of the heat itself.\u003c\/p\u003e\n\u003cp data-start=\"2200\" data-end=\"2493\"\u003eFor this reason, we chose \u003cstrong data-start=\"2226\" data-end=\"2260\"\u003etraditional wood-fire roasting\u003c\/strong\u003e. Experienced tea producers have long recognized that the type of wood or charcoal used can influence the final character of the tea. For this reason, traditional charcoal used for roasting premium oolong tea is often produced from carefully selected hardwood species to achieve the desired roasting profile.\u003c\/p\u003e\n\u003cp data-start=\"856\" data-end=\"1209\"\u003eFor this Hojicha, we worked closely with the tea producer to prepare \u003cstrong data-start=\"925\" data-end=\"957\"\u003enaturally grown Japanese oak\u003c\/strong\u003e (\u003cem data-start=\"959\" data-end=\"965\"\u003eNara\u003c\/em\u003e oak) as the sole fuel for roasting. The two approaches differ fundamentally in their philosophy: while hojicha traditionally emphasizes a strong roasted aroma and a pleasant bitterness, this product takes a different approach.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"isSelectedEnd\"\u003e\u003cspan\u003eFor this tea, the leaves are roasted for many hours while maintaining a consistent temperature throughout the process. It is an exceptionally time-consuming method that incorporates the concept of oolong tea aging into hojicha production. As a result, its design philosophy is clearly distinct from that of conventional hojicha.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp class=\"isSelectedEnd\"\u003e\u003cspan\u003eAlthough the product is named “Light Roast” (軽焙), this does not mean that the roasting is weak or that the process is completed in a short time. Rather, it refers to a roasting style that avoids intentional charring by using a lower temperature over an extended period.
