Ripe Pu-erh Tea

Pu-erh tea comes in two varieties: "raw" and "ripe."

The tea that is brown in color with a unique aroma reminiscent of dried mushrooms and dried fruits is ripe Pu-erh tea. Most of the tea commonly referred to as Pu-erh tea in Japan is ripe tea.

Ripe tea is made from raw Pu-erh tea and undergoes fermentation primarily by actinomycetes and other microorganisms.

On the other hand, in Yunnan Province, Pu-erh tea usually refers to raw tea. Raw tea is made through pan-frying and sun-drying, with no involvement of microorganisms in the production process. Raw tea does not have a particularly strong aroma, but it has a gentle flavor that, once acquired, makes it difficult to live without.
