Pu-erh tea is categorized into "Raw" and "Ripe" types.
The tea with a brown color and unique aroma resembling dried mushrooms or dried fruits is the Ripe Pu-erh. In Japan, most of the tea referred to as Pu-erh is the Ripe type.
Ripe Pu-erh is made from Raw Pu-erh tea leaves, fermented by various microorganisms, primarily actinomycetes.
On the other hand, in Yunnan Province, when people refer to Pu-erh tea, they mean Raw Pu-erh. Raw Pu-erh is made by pan frying and sun drying, without any involvement of microorganisms in the production process. Although Raw Pu-erh doesn't have a strong aroma, it has a gentle taste that becomes so appealing that one cannot live without it once accustomed to it.
